Ingredients:
200g noodles (rice, soba, or whole-wheat)
2 tablespoons peanut butter
1 tablespoon soy sauce
1 teaspoon sriracha or chili sauce
1 teaspoon sesame oil (optional)
1 garlic clove, minced
1/2 cup julienned carrots
1/2 cup chopped spring onions
1/4 cup roasted peanuts (for garnish)
Instructions:
Cook noodles according to package instructions and set aside.
In a small bowl, mix peanut butter, soy sauce, sriracha, sesame oil, and minced garlic into a smooth sauce.
Toss the noodles with the sauce until evenly coated.
Add carrots and spring onions for crunch and freshness.
Garnish with roasted peanuts before serving.
