Recipe:

  • Ingredients:

    • 3 large eggs

    • 1 small onion, finely chopped

    • 1 small tomato, finely chopped

    • 1 green chili, finely chopped (optional)

    • 2 tablespoons coriander leaves, chopped

    • 1/4 teaspoon turmeric powder

    • 1/4 teaspoon red chili powder (optional)

    • Salt to taste

    • 1 teaspoon oil or ghee

Instructions:

  1. Crack the eggs into a bowl and whisk until frothy.

  2. Mix in chopped onion, tomato, green chili, coriander leaves, turmeric, red chili powder, and salt.

  3. Heat oil or ghee in a non-stick pan over medium heat.

  4. Pour the egg mixture into the pan and spread evenly.

  5. Cook for 2-3 minutes on one side, flip, and cook for another minute.

  6. Serve hot with whole-grain bread or a side salad.
